Tomato Rice with Coconut Milk/ Tomato Rice

Tomato Rice or Tomato Biriyani is the latest recipe in my Lunch box collection! I am always on the lookout for variety lunch box ideas that are healthy, tasty and filling. Apart from sandwiches, Noodles and Chappathi rolls, I make sure they take rice dishes to school. Active kids require an endless supply of energy. Rice dishes contain a lot of Carbohydrates and help them retain their energy for long school hours. Coconut milk in this recipe transforms the whole Tomato rice, makes it exceptionally alluring with rich flavors.

Thakkali Chor or Tomato Rice is known in many names like Thakkali sadam, Tomato sadam, Tomato Biriyani, Tomato Pulao, Tomato Pilaf etc. I have already added Tomato Paneer Pulao which is another favourite lunch box option. Tomato Rice with Coconut milk is quite simple to prepare and a great vegetarian recipe for Bachelors. You can even use the store brought Coconut milk for this recipe. Pair it with some omelette, Raita and Pappad; or some fried Paneer cubes and enjoy this exquisite meal. This tomato rice is prepared in pressure cooker; another advantage for beginners and office goers.

I got this recipe from my dear friend Kavitha, who never fails to surprise me with her simple yet delicious culinary delights. We were discussing kids lunch box ideas and I was not convinced with this recipe, initially. And one day, after tasting her yummy Tomato rice, I had no doubts as to what would be my dinner that day. Everyone enjoyed the simple yet extremely flavorful Tomato Biriyani with some fried Paneer cubes.

I have used Basmati Rice for Tomato Rice, you can even try with Jeera rice. Use local tomatoes that are less sour for this recipe. So, next time you have surprise guests, this would be a very handy recipe. Here is the wonderful recipe for Tomato Rice with coconut milk – Kavitha’s version!

Ingredients:

Basmati Rice: 2 cups
Tomatoes: 4 nos. ( big)
Coconut Milk: 3 cups (from half coconut)
Cardamom: 2 nos
Cloves: 2 nos.
Cinnamon: 1 stick
Ghee: 2 tsp
Coconut oil: 2 tsp
Onion: 2 nos (medium)
Ginger: small piece
Garlic: 6 – 8 cloves
Green Chilli: 3 nos.
Curry Leaves: 2 sprigs
Coriander leaves: little
Fried Onions and cashew: for garnishing

Method:

Wash the tomatoes and blanch in hot water for 5 minutes. Deskin and grind it with little water to get 1 cup tomato puree. Extract coconut milk (3 cups) and keep aside. Soak rice in water for around half an hour. Drain and keep aside. Grind Ginger, Garlic, Green chili and Curry leaves together. Heat oil/ ghee in a pressure cooker and add Cardamom, cloves and cinnamon stick. Add the sliced onions and fry till translucent and add the ground paste. Sauté for some time and add the tomato puree. Bring to a boil and add Coconut milk. Adjust the salt and add chopped coriander leaves. When it boils add the drained rice, combine well and cover and pressure cook on low flame till one whistle.

When the pressure is completely released open the pressure cooker and transfer to a plate. Garnish with roasted cashew, fried onions and chopped coriander leaves. Enjoy Tomato rice with Raita, Papad and Omelette/ fried Paneer cubes.

Tips:

  • I have used Basmati rice for this Tomato Pulao. Jeera rice can also be used.
  • Since it is prepared in Pressure cooker, rice will be sticky and lumpy. To avoid that, once the pressure is released, open the lid and allow to cool for few minutes before stirring slowly to separate the rice.
  • Add more green chilies if you want it spicier.
  • Make sure the puree and coconut milk together is exactly double the measure of rice. (For 2 cups rice, 4 cups).
  • Coconut oil gives you delicious flavors; you may use any good brand of sunflower oil instead.
