Corn Chaat, Corn Sev Puri, Masala Corn Chaat

Corn Chaat / Corn Masala Chaat is a wonderful anytime snack that is loved by one and all. Mumbai street food or Chaats are now famous all around the world. You can see chaat joints in every nook and corner of the country, selling all kinds of chaats like Pani puri, Pav Bhaji, Sev Puri, Bhel puri, Dahi Papdi Chaat, Vada Pav, Crunchy Samosas etc. The tempting colorful combination and the sweet, spicy, tangy, chatpata flavors never fail to attract customers. I just love all kinds of chaats, be it the buttery Pav Bhaji, Chole Bature, Fried Idli Chaat, Pani puri or Sev puri.

Chaats or street foods are very popular comfort snacks especially during rainy season. Fried snacks like Banana fritters, Masala vada, Uzhunnu Vada, Crispy ConesPotato croquettes, Pakodas, cutlets, spring rolls, samosas are all in much demand this season. I was longing for some Sev Puri and got some plain Sev, when I visited the supermarket last week. After I made the chutneys, I changed my plan and boiled the corn instead of potatoes. It took less time to prepare and the cold weather was making all of us hungry. So, started assembling everything else while the corn was getting cooked and it turned out just perfect. Yum..Yum! It boosted our energy and spirits within no time! Unlike Pav Bhaji, you can indulge in Corn Chaat, guilt free, as it is healthier and other than fried papdis and sev, there is nothing “fatty” about it. Street foods and chaat corners are a big temptation and it is better to recreate them at home to be on the safe side. I make Chicken momos, vadas, cutlets, Parotta, fried chicken snacks etc. at home.

Corn Chaat is like a combination of Sev Puri and Papdi chaat with the added goodness of Corn. I have used Papdis or crispy flat puris to make it crunchy. The chutneys and chaat masala make it flavorful along with tongue tickling crispy Sev. You can use store brought Papdis and Sev to save time as instant homemade Papdis can turn soft over time.  Mix up the Corn, onions, tomatoes, cucumber, coriander leaves, chutneys, crushed papdis and Sev with a hint of chat masala and you have the perfect, healthy snack. Add some roasted peanuts to enhance the appeal. You can make variations with sprouts, chana, potatoes etc. to get your custom-made Corn Chaat as per your choice of ingredients. Just dig in and enjoy.

Serves: 4

Ingredients for Corn Chaat:

Corn (frozen): 1 ½ cups
Onion: 1 large
Tomatoes: 1 large
Cucumber: one half
Capsicum/Bell pepper: half (optional)
Plain Sev: 1 cup
Papdis / Crispy, flat puris: 1 cup
Dates chutney: 1 ½ tbsp
Coriander chutney: 1 tbsp
Chaat Masala: ½ tsp
Salt: ¼ tsp
Coriander leaves: ¼ cup
Roasted peanuts: few (optional)

Ingredients for Sweet and Sour Dates Chutney:

Dates: ½ cup
Tamarind (Valan Puli): 1 lemon size ball
Jaggery (grated): 1 tbsp
Chilli Powder: ½ tsp
Cumin / Jeerah Powder: ¼ tsp
Chaat Masala: a pinch
Salt: a pinch
Water: half cup

Ingredients for Coriander Chutney:

Coriander leaves: ¾ cup
Mint leaves: ¼ cup
Green chilies: 2 nos.
Ginger: one small piece
Cumin / Jeera powder: ¼ tsp
Lime juice: half lime
Water: 2 tbsp
Salt: as required

 

Method:

For dates chutney, boil the dates, tamarind, Jaggery in water till it becomes soft. Add chili powder, jeera powder, salt and keep aside to cool. Grind to a smooth puree and mix in the chaat masala. For the Coriander chutney, grind coriander leaves, mint leaves, green chilli, ginger, jeera powder and lime juice, with 2 tbsp water and salt. Grind to a smooth chutney and keep aside.

Boil the corn in a steamer for 5 minutes. Chop the onion, tomatoes, cucumber, coriander leaves. Crush few Papdis. In a large bowl, mix the corn, chopped items, Dates chutney, coriander chutney, chaat masala, salt, crushed Papdis, little Sev and mix well. In a serving plate, arrange the Papdis and top with the Corn mix. Sprinkle more Sev and roasted peanuts on top and serve immediately. It is finger licking good!

For homemade Papdi/ Crispy flat Puri, mix 1 cup Maida, salt, a pinch of ajwain, a pinch of Baking Powder and 1 tbsp oil to make a bread crumb texture. Slowly add water little by little to make a tight dough. Flatten into thin chappathis and prick all over with a fork and cut into small pooris.

Fry the pooris in hot oil till brown on both sides.

Tips:

  • You can use store bought Papdis or make at home.
  • Plain Sev is available in supermarket.
  • Please adjust the spices according to your taste.
  • Add boiled and cubed potatoes, boiled chana, Bell peppers, Pomegranate etc.to suit your taste.
  • The chutneys can be prepared ahead and kept in the fridge.
  • Corn Chaat is a great snack for kid’s parties or get togethers.
  • Add more lime juice just before serving if you like it tangier.
