Preparation & Cooking the Pavakka:

  • Prep the Bitter Gourd:
Wash the bitter gourd thoroughly in salted water. Pat dry, halve lengthwise, scoop out the pith and seeds, and cut into thin, uniform slices.

  • Seasonng the Gourd:
In a clay pot (kalchatti) or pan, combine the sliced bitter gourd, sliced shallots, slit green chilies, curry leaves, salt, and 1 teaspoon of coconut oil. Mix thoroughly.
  • Steam Cook:
Cover with a tight-fitting lid and cook over low medium heat without adding any extra water. Stir occasionally to prevent sticking until the gourd pieces soften and turn pale green (about 8–10 minutes).

Roasting & Grinding the Spices:

  • Roast the Coconut:
Heat 1 teaspoon of coconut oil in a heavy bottomed kadai. Add the grated coconut and sauté continuously over medium low flame. Stir regularly to ensure even browning until the coconut turns a rich, uniform dark golden brown.

Add coriander powder, chili powder, and turmeric powder to the browned coconut. Stir for 20–30 seconds until the spices release their aroma, then immediately turn off the heat to avoid burning. Transfer the mixture to a plate to cool.

  • Grind to a smooth paste:
Transfer the cooled coconut mixture into a small mixer jar. Grind without adding any water, scraping down the sides as you go, until the natural coconut oils release and it turns into a fine, smooth paste.

Assembling & Simmering the Theeyal:

  • Combine and Simmer:
Add the ground roasted coconut paste and the extracted tamarind water to the cooked bitter gourd. Mix well, bring to a gentle boil, and let it simmer on low flame for 5–7 minutes until the gravy thickens and flavors meld.

Notes

  • How do you reduce the bitterness in Pavakka Theeyal? Slicing the bitter gourd thinly and tossing it with salt before cooking draws out moisture and harsh juices. Cooking it covered in coconut oil softens the raw edge, while the combination of roasted coconut and tamarind naturally balances any lingering bitterness.
  • Can I prepare the roasted coconut masala ahead of time?  Yes. The roasted coconut spice paste can be made up to 2–3 days in advance and stored in an airtight glass container in the refrigerator. You can also freeze it for up to a month—simply thaw and add directly to cooked vegetables.
  • What are the best accompaniments for Pavakka Theeyal? Pavakka Theeyal is traditionally served alongside steamed Kerala Matta rice, crispy papadums, and mild curd-based sides like Moru Curry or a cooling Cucumber Pachadi to complement the deep, roasted flavors.
