Cooking the Vegetable
Prep & Simmer the Ash Gourd: Peel the thick green skin of the kumbalanga, scrape out the soft inner pith and seeds, and cut the flesh into bite-sized 1-inch cubes.
Boil with Aromatics: In a clay pot (manchatti) or heavy-bottomed pan, combine the ash gourd cubes, sliced shallots, slit green chili, curry leaves, turmeric powder, salt, and 1/2 cup of water. Cover and cook on medium flame for 6–8 minutes until the gourd turns soft and translucent (alternatively, pressure cook for 1 whistle).
Blending & Simmering the Coconut Paste
Grind the Masala: In a small wet grinder or blender jar, add the grated coconut, shallots, green chili, cumin seeds, turmeric powder, garlic clove, fresh ginger, and a few curry leaves. Add 3 tablespoons of water and blend to a smooth, fine paste.
Combine with Cooked Gourd: Pour the ground coconut paste into the cooked ash gourd. Stir well, adjust salt to taste, and let it simmer over low flame for 2–3 minutes until the raw edge of the shallots and cumin dissipates.
Adding Curd & Tempering
Incorporate Beaten Curd: Turn the heat down to the lowest setting. Pour in the whisked thick curd while stirring continuously. Allow the curry to warm through gently for 1–2 minutes without letting it bubble or boil. Remove from heat immediately.
Prepare the Coconut Oil Tempering: Heat coconut oil in a small pan. Splutter the mustard seeds, then add the pinch of whole fenugreek seeds, dried red chilies, and curry leaves. Let them crackle. Turn off the flame, immediately add the pinch of chili powder, and pour the sizzling tadka over the curry. Cover with a lid for 5 minutes before serving to trap the aroma.

FAQ 1: How do I stop the yogurt from curdling in Moru Curry?
To keep the curry silky smooth, ensure the curd is thoroughly whisked at room temperature before adding. Keep the heat on lowest, stir constantly, and never allow the curry to reach a boil after the curd is added.
-
FAQ 2: Can I substitute Kumbalanga (Ash Gourd) with other vegetables?
Yes! The same coconut-curd base works deliciously with yellow cucumber (Vellarikka), raw papaya, pineapple, or ripe mangoes (Mambazha Pulissery). Adjust the cooking liquid slightly based on each vegetable's moisture content.
-
FAQ 3: How should I store and reheat Kumbalanga Moru Curry?
Store leftovers in an airtight container in the refrigerator for up to 2 days. Because curd curdles easily when reheated over direct high heat, reheat gently in a double boiler, microwave in short 20-second bursts at 50% power, or simply bring it back to room temperature naturally before serving.
