Whole Wheat Naan /Kulcha/ Naan

Whole wheat Naan is a healthier option for all Naan/ Kulcha lovers. Naan or Kulcha is a much sought after Indian flatbread during dine outs or parties, along with spicy curries or Paneer dishes. Naan or Kulcha made with white flour or Maida used to be the rage earlier, but with all the healthy new concepts, people are searching for healthier options and hence the whole wheat Naan is the new passion. And it does taste good!! Whole wheat Naan goes well with Butter chicken, Kadai Chicken, Paneer Butter Masala, Pepper Chicken, Nadan Chicken curry, Kashmiri Mutton CurryChinese Chilli FishPalak Paneer, Matar Paneer, Paneer Korma or any spicy curry and refreshes your taste buds, with new delightful flavors.

Indian Flatbreads like Naan, Kulcha, Rotis, Parathas are popular all over the world. This is a simple recipe and can be made on stove top, all you need is a good skillet. I have tried Whole wheat Naan with yeast and also this version for Kulcha type flatbread. Naan is usually made with yeast and is kept for rising, while Kulcha with Baking Soda is little more soft and fluffy. Also, check the recipe for Amritsari Paneer Kulcha. So, here is the the recipe for Whole wheat Naan. Well, be prepared for repeat episodes; you will get a lot of requests after the first time!!

Ingredients:

Whole Wheat Flour: 2 ½ cup
Maida: ½ cup
Sugar: 1 ½ tbsp
Salt: as required
Baking Soda: ¾ tsp
Baking Powder: ¼ tsp
Curd: 2 tbsp
Warm Milk or water: as required
Oil: 1 tbsp
Butter: for spreading
Coriander leaves: little
Onion Seeds/Sesame seeds (optional): little

Method:

Mix the whole wheat Powder, Maida, sugar, salt, Baking powder and Baking soda. Add the curd and enough warm milk and mix well to get a nice soft dough. Rub oil in your hands and knead the dough well. Keep it covered for 2 hours.

Make small balls and flatten with a rolling pin to make a small oval shape. Heat a skillet or thick bottomed Tawa on the stove. When it is hot, place the flattened bread and cover with a lid. Keep on low flame for 1 full minute. You will be able to see the bubbles on top. Turn it, cover and cook for 1 minute. Turn again and spread little butter, top with chopped coriander leaves and sesame seeds (optional).

Turn again and transfer to serving plate. Repeat the process till you are done with the dough. Serve hot with Paneer butter Masala or Butter chicken or Kadai chicken. Enjoy!!

Tips:

  • The dough should be soft and not hard.
  • Using a little white flour helps to keep the elasticity of the dough.
  • Adding Milk makes it softer. You can also add warm water.
  • Naan tastes good when served hot. However, this Naan will remain soft even when it is cold.
