Easy and Soft Unniappam

Unniappam is a favourite snack among Keralites. The brown yummy sweet balls are the best treat for your taste buds. With very simple ingredients, this is a perfect evening snack and can be prepared within no time. Since, this is made of Wheat flour, it is healthy as well. Preparing snacks for kids can be very challenging; some like it sweet like Ethakka Appam, Vattayappam, Kozhukatta, Cakes etc, some like it spicy like Unda and chammanthi, samosa, Potato croquettes, spring rolls, masala vada, Uzhunnu vada, Pizzas, Garlic Bread, sandwich, Egg Puffs, Sausage Rolls etc. and some like it crunchy like Butter Murukku. This Unniappam is not very sweet, but perfectly healthy as we add Jaggery.

There are several recipes, and I have tried out a few and this recipe is a healthier version of what my mom and aunts used to make. They used to make it with Maida or Raw rice powder, and I tried with Wheat Powder. It came out softer and tasted yum, but then I think all versions are yummy. So, I know what is going to be the evening snack at your home today. Ready ?

Ingredients:

Wheat Powder : 2 cups
Rava (Semolina) : 1 cup
Banana (Njali Poovan / yellaki) : 1
Jaggery : as reqd.
Soda powder : 1 pinch
Grated coconut : 1 cup
Egg (optional) : 1

Method:

Grind coconut with little water. Mash the banana. Mix all the ingredients with salt to a smooth dropping consistency (means falls out of the spoon). Keep it for half an hour covered. Heat the appakara, pour oil,( just to fill the balls)and when hot put little batter into each ball turn and fry till brown and drain.

Tips:

  • Avoid egg if you are a vegetarian.
  • Substitute wheat flour with Maida and you get a different taste.
  • You can use Njali Poovan (Yellaki) or Palayam kodan banana (Baby banana)
  • Try with half measure first; it’s still plenty for a small family.
  • You can also try adding finely chopped fried coconut pieces to the batter if you like biting coconut pieces.
