Egg Puffs / Homemade Egg Puffs

Egg Puffs are a popular snack in Kerala. If you go to any bakery in the evening, the flavours from the freshly baked puffs are so enchanting and you end up gobbling those fresh puffs. Meat Puffs, Egg Puffs, Veg. Puffs, Chicken Puffs, Paneer Veg. Puffs – all these varieties of Puffs are always in great demand. I have a foodie family, and Puffs used to be one of our favourite evening snacks during childhood. I still have nostalgic memories of buying hot Puffs and cream puff cones from this bakery called Best Bakers near our home in Ernakulam. Most of the time, when all the family members were present, the entire baked puffs available in that bakery would come home! 🙂

Eggs are great source of quality protein and has essential amino acids, which makes it a great choice for your diet. Try my Kerala Egg roast, Egg curry with potatoes, Egg Biryani etc. if you like eggs. Although eggs were considered as high cholestrol foods earlier, now we know that it has no risks and it does not raise your blood cholestrol levels. It is also rich in nutrients and vitamin D which is good for better bones. So, enjoy your eggs without any worry.  

These Kerala Egg Puffs are an excellent snack for kids. All summer, kids are active with games and swimming and so they need some energy boost. Snacks are what they enjoy most, so, Sausage rolls, samosas, pizzas, smoothies, shakes, garlic bread, croquettes, cutlets the wish list goes on.. It is better to provide food cooked at home to be on the safe side. In summer, avoid street food shops and juice shops and prepare homemade snacks. You can make Momos, cutlets, spring rolls and refrigerate and steam, bake or fry them when required. I always make the Puff pastry sheets in advance and stock so I could make some quick snacks for kids. Check out how to make puff pastries at home. Ingredients :

Puff Pastry squares: 6 squares.
Boiled Eggs: 3 nos.
Onion: 1 big
Garlic cloves: 6 nos
Ginger: small piece
Curry leaves: few
Kashmiri Chili Powder: ½ tsp
Pepper Powder: ½ tsp
Turmeric Powder: ¼ tsp
Garam Masala: ½ tsp
Tomato: 1 no.
Egg: 1 No. for Egg wash

Method:

Boil the eggs and keep aside. First check out the link to know how to make puff pastries at home. You can make 6 puffs with the measure. Take the cold pastry sheets from fridge and keep out to thaw for 10 minutes. Meanwhile, Heat oil in a pan and add sliced onions, garlic and chopped ginger, curry leaves and sauté well. Add the spice powders and fry for few minutes. Add chopped tomatoes and sauté. Add salt to taste. Your egg Masala is ready.

Peel the eggs and cut into halves and keep ready. Divide the pastry sheet into 6 equal parts. Take one portion and roll into a small square using rolling pin. Put a spoonful of Egg masala in the middle of the square. Take one piece of egg and place it upside down in the middle. See pics.

Fold from opposite sides and seal. Finish the rest of the pastry sheets the same way. Grease a baking tray and arrange the egg puffs.

Egg Puffs

Beat an egg and with a brush apply a lavish coat on top of the egg puffs. Keep in a preheated oven @ 170oC for almost 20 minutes and at 180OC for another 20 minutes or till done. (Temperature may vary from oven to oven).  Take it out and enjoy delicious egg Puffs!!

Tips:

  • Adjust the spices as per your taste.
  • The Puff pastry measure is enough to make six puffs.
  • Don’t add water to the egg Masala gravy. It should be dry.
  • You can make the pastry sheets in advance and keep in fridge.
