Making Puff Pastry at home

I used to think making Puff pastry at home was a difficult task till recently. When I stayed in Dubai, we used to get these frozen readymade Puff Pastry sheets. I loved making snacks with those pastry sheets. Easy flaky Puff pastry snacks like, Puff sausage rolls, Egg Puffs, Paneer Veg.Puffs, Meat Puffs, Sugar glazed puff biscuits etc., all these yummy treats, in very less time!! But after coming to India, it was hard to get puff pastry sheets. And I missed them very much.

Initially, I used to make Puffs pastry sheets with butter, instead of Margarine. After I learned from a baking class at IBCA, I replaced butter with Puff Margarine, a shortening with no moisture which helped me make flaky and crispy puffs. Puff Margarine will be available in bakery products shops, and if you can get Puff Maida, that is specially used for making Puffs, it would give you best results. However, if you are not keen on using Margarine, use butter and sprinkle some flour to get layers. Butter has more moisture content, which results in dense layers.

This is a simple and easy to make Puff Pastry recipe and it can be stored in freezer for one to two weeks. And you can make your choice of snacks with it. Shall we begin? It is easy, believe me. We will make all those wonderful puff snacks together. I will put up many easy and simple puff recipes for you. So we will start with the basic steps of Making Puff Pastry at home first.

Ingredients :

Flour: 3 cups (450 gms approx)
Salt:  as required  3/4 tsp
Butter: 20 gms (chilled)
Puff Margarine: 200 gms (chilled)
Ice Cold water: 1 cup (Approx)

Method:

In a wide bowl, mix flour and salt. Chop half of the cold butter (50 gms), in small cubes. Mix well to bring a crumbled effect. You should be able to see bits of butter. Now, make a well, and pour little cold water and knead into a rough dough. Add more water if required. Take care not to make it smooth by over kneading.

On a clean surface or board, dust some flour and keep the dough. Pat and make a rough square shape with your hand. Dust flour and with a rolling pin, roll the dough into a rectangular shape. Grate the Chilled Margarine and keep aside. Divide the Margarine into 5 equal parts. Spread one part of the margarine on two third portion of the rectangle.Take the plain end of the rectangle and bring to the middle portion. Again cover that with the other portion filled with margarine, so that you get three layers of  dough with margarine in between. Sprinkle margarine on half of the portion and fold again to cover. Seal it with cling wrap and refrigerate for 15 mts.

Dust again and roll out again into rectangle. Mark three portions and repeat the process. Roll, fold and repeat process 4 times. After the last fold, cover the rectangle in a plastic wrap and chill for one hour or more. You can store this in the freezer if you don’t plan to use it immediately.

After one hour, you can take out from chill, cut into squares to make Puffs of your choice, sweet puff biscuits etc.

Tips:

  • Butter and margarine should be chilled.
  • Puff margarine gives the layers as it has less moisture. Use grated Margarine for best results and keep refrigerated.
  • You may use Butter, if you are not sure about Margarine, but the layers will be dense and not flaky. All said, butter gives a better flavor and is better for health. Sprinkle flour after spreading butter.
  • Use chilled water to knead the dough.
  • The dough should not be over kneaded at first.
  • Always dust with flour before rolling.
  • You can cut the sides with a knife to make perfect squares and use the cuttings for making flaky sugar pastry.
  • You need to repeat the process 4 or more times for layers.
