Marble Cake

Marble cake is another baker friendly cake and can be prepared very easily. It is basically a Vanilla cake with streaks of chocolate and gives a stunning marbled appearance.  I always love making it and love to see the patterns evolving as you blend the vanilla and chocolate cake mix. Marble cake is better enjoyed plain as a tea cake or you can make it more splendid by scattering just some icing sugar on top. Ingredients

Butter (Cooking Butter/ Unsalted): 180 gms
Powdered sugar: 190 gms
Eggs: 4 nos.
Flour (Maida): 180 gms
Cocoa Powder: 2 tbsp
Baking Powder: 1 ½ tsp
Vanilla: 1 ½ tsp
Milk/ Water: 2 – 3 tbsp

Method

Measure and keep ready all ingredients. Grease a baking tin (8” width) and dust it with flour. Sift the flour and Baking Powder together three or four times to mix it well. Beat the butter in mixing bowl till soft and fluffy. Then add the powdered sugar and beat in full speed till soft and well combined. Add eggs one at a time and beat well. Add the vanilla essence and mix.

Take a spatula (cake mixing spoon) and gently fold in the flour to the batter little by little. Always remember to fold in one direction only. If the mix is too thick add 1 tbsp milk to get a good dropping consistency. Take more than half portion of this batter and keep aside. Mix the cocoa powder to the other half of the batter and mix well with 1 tbsp milk. Pre heat the oven to 180oC (356oF). Fill this batter and the vanilla batter in alternate heaps in the tray. Gently mix the batter to get a wonderful marble effect with your finger or edge of spoon.

Fill the cake pans only half and then lightly tap them on the counter before placing them into the oven. Tapping the pans will force any air bubbles to the surface, which can help avoid holes in your finished cake. Bake in the preheated oven for 25-30 minutes till the top is light golden brown. Take it out and insert a toothpick in the middle and if it comes out clean, your cake is perfect. Allow it to cool in the same pan and invert to a cake board/ plate tapping at the bottom of the pan gently. You can try decorating by sprinkling powdered sugar/ icing sugar on top. Cut the cake and see the marble effect. Isn’t it entrancing??

Tips:

  • You can arrange vanilla and chocolate in layers or in any other artistic way of your choice.
  • Add milk to make the batter to a dropping consistency.
  • Always make sure you have the correct measurements.
  • Always keep Butter in normal temperature for 4-5 hours before you start.
  • Fresh eggs should be used for a better result.
  • Flour and baking powder should be mixed well. Sift 3 -4 times to release air bubbles.
  • Don’t open the oven door while the cake is baking for the first 15 – 20 minutes. Open only when it is golden brown and insert a tooth pick to see if it is done.
