Chicken Manchow Soup / Hot Chicken Manchow soup

Chicken Manchow soup is an Indo Chinese dish; known for its hot and spicy flavors. It is extremely delicious and a perfect balance of chicken and vegetables loaded with plenty of flavors! Served with fried noodles it is always a delightful treat for kids and adults as the crispy fried noodles is the perfect accompaniment to the hot and spicy brown soup. Chicken Manchow soup is a recent addition to my menu as I never thought it was this easy to prepare. I frequently make chicken soup at home as it boosts immunity and the kids enjoy hot soups during cold climate. It is my powerful weapon to fight colds and sore throats.

The chicken, vegetables, egg, spices and herbs all makes the Chicken Manchow Soup special and you will surely enjoy the spicy, tangy flavors on a rainy day. You can make the chicken stock or broth a day ahead to save time and fried noodles can be stored in an airtight container well in advance. It is a fantastic healthy soup and quite easy to make like my homemade chicken soup or Broccoli and chicken soup. Always remember that when you make chicken stock at home, it is best to use the bony parts like neck, wings and legs and cook on low heat for an hour. It makes the soup healthier. While making stock you can add your choice of vegetables, onion and garlic to make it stronger and it would effectively ward off the “bacteria and virus”. Cuisine : Indo-Chinese

Serves: 4

Ingredients :

Chicken stock/ broth (check link): 4 ½ cups
Corn Flour: ¼ cup
Water: ¼ cup
Egg whites: 2 nos.
Ginger: 1 small piece
Garlic cloves: 8 – 10 cloves
Green Chili: 3 nos.
Red Chili sauce: 1 ½ tbsp
Soy Sauce: 1½ tbsp
Sugar: a pinch
Pepper Powder: 1 tsp
Mushroom (optional): ½ cup
Carrot: 1 cup
Cabbage: 1 cup
Chicken Breast (chopped finely): 1 cup
Capsicum/ Bell Pepper: ½ cup
Spring Onion: ½ cup
Celery: 1 tbsp
Coriander Leaves/ Cilantro: ¼ cup
Fried Noodles: 1 cup

Step by Step recipe for Chicken Manchow soup

  1. First, prepare the Chicken stock/ broth. Cook chicken with vegetables and spices. Check Homemade Chicken Soup recipe for detailed recipe.
  2. Chop the garlic, ginger and green chilies finely.
  3. Chop the carrots, cabbage, Mushroom and Capsicum thinly.
  4. Chop the spring onion and Coriander leaves.
  5. Strain the chicken broth and discard the bones and vegetables. Shred the chicken from the bones and keep aside (You can add this also to the soup later).
  6. Mince/ Chop the chicken Breast finely and mix with salt, little vinegar and pinch of pepper.
  7. Heat oil add the ginger, garlic, green chilies and sauté well.
  8. Next, add the chicken and fry for two to three minutes. Drain and keep aside.
  9. Now, add the carrots to the same pan and stir for a minute and add finely shredded cabbage, Mushrooms, Capsicum and Spring onion whites.
  10. Add the sauteed chicken pieces (also the shredded chicken pieces if any from the broth), pepper, Red chili Sauce and soy sauce and add a pinch of sugar.
  11. Mix well, and finally add the spring onion greens, celery and coriander leaves. Take off from fire.

  1. Heat the Chicken stock and bring to a boil.
  2. Mix Corn flour in ¼ cup water and pour to the stock, stirring continuously to avoid lumps, to thicken the soup. Add more corn flour mixed in little water if the soup is not thick enough.
  3. Beat one egg and add to the soup through a strainer. Make sure the strainer is held high and the egg drops in a thin line to the boiling soup. Stir continuously while doing this to get a nice thread like texture.

  1. Now add the chicken and vegetable mix to the soup. Bring to a boil and keep aside. Serve hot with fried noodles.

  1. For frying the noodles, Pour hot water and keep covered for 10 minutes. (I Used Hakka noodles). Add little salt, strain and keep for cooling.
  2. Once it is cold and dry, fry in oil till crisp. Make sure not to brown them. You can keep it in an airtight container for two weeks.

Tips:

  • Add more green chilies or chili sauce if you like it spicier.
  • Adjust the corn flour measure to achieve desired thickness.
  • Sugar is added to balance the flavors and seasoning.
  • The soy sauce used is dark soy sauce, if you are using light soy sauce, add more to get the desired taste.
  • The vegetables should not be over cooked, just stir fry for one minute.
  • You can add Red capsicum, Mushrooms, Onions, Beans as per your choice.
  • Adding Coriander leaves gives the soup a special delightful flavor and appeal.
