The mildly bitter caramel topping balances the sweetness of the custard and Apple Pudding perfectly. Ingredients:
Apple | : 3 nos. |
Sugar | : 3 tbsp |
Butter (unsalted) | : 1 tbsp |
Water | : ½ cup |
Lime Juice | : 1 tsp |
Cinnamon Powder | : one small pinch |
Digestive Biscuits | : 3 packets (300 gms) |
Butter | : 50 gms |
Milk | : 3 – 4 tbsp |
Condensed Milk | : 1 tbsp |
Milk | : 2 cups |
Custard Powder (Vanilla) | : 2 tbsp |
Sugar | : 2 – 3 tbsp |
Caramel | : little for topping |
Method:
Peel and cut the apple into small squares. In a pan, mix the apple, 3 tbsp sugar, 1 tbsp butter, water and cook till soft on slow fire, for about ten minutes, stirring occasionally. The water should dry and the juice should be coated on the apple pieces. Then add lime juice and cinnamon powder. Mash coarsely with a potato masher and keep aside.
Crush the biscuits coarsely and mix with butter to get a crumbled effect. Mix 3 tbsp milk with condensed milk and add this to the crumbled biscuit and combine well to form a wet sticky mixture.
In a tray or bowl, spread a thin layer of biscuit mix and then top with apple pulp. Press firmly and again layer with Biscuit mix and apple pulp and top with biscuit mix. Cover and refrigerate for 1 hour or more.
Take 2 cups milk and keep ¼ cup of milk aside. Boil the milk and add enough sugar. Mix the custard powder in ¼ cup of milk and add to the boiling milk stirring continuously. When you get a thick custard, take off the stove and allow to cool. Stir in between to avoid clotting/ formation of fat layer.
Keep in the refrigerator. To make caramel, melt 3 tbsp of sugar without stirring and when it turns slight brown liquid, turn off the heat and add 1 tbsp hot water and stir well to get golden caramel syrup.
When you are ready to serve, cut the apple biscuit crumble into squares and place on the serving plate. Top with generous coating of custard and garnish with biscuit crumbs and drops of caramel. Enjoy this refreshing Apple Biscuit Crunch pudding and the delightful blast of flavors.
Tips:
- Cook the apples immediately after peeling/ cutting to avoid losing the pearl color.
- I used Mc-Vitie’s digestive (whole wheat) biscuits.
- You can make extra caramel and store the caramel in an air-tight container at normal temperature for a long time.
- Only add a small pinch of cinnamon powder or it will overpower other flavors.
- Nutmeg powder can also be used or a mix of both nutmeg and cinnamon as per your taste. (small pinch)
- Custard should be of thick consistency.
