Simple Chicken Roast (Thirummi Roast)

Simple Chicken Roast (Thirummi Roast) is my “Mother’s Day special” recipe for you. Dedicating this recipe to all Mothers; the most wonderful creation of God, an epitome of selfless love!! Each mother is special and irreplaceable, and for most of us, there will be some food that we can recall as special; a total comfort food like no other, that you desire for again and again. Nutritious food, with tasty and exciting ingredients made with a lot of love and care, that is why this recipe is special for me. During our childhood, this Simple Chicken Roast was very much part of the Family menu during all special occasions and one of the most sought after dishes. Both my Mummy and Ammaunty (Annammaunty) are specialists of this classic dish and they both try this recipe with Duck and Beef as well, which are also quite delightful and appealing.

I have developed another style of this traditional family recipe, Easy Chicken Roast, which is an easier version of this Simple Chicken Roast (Thirummi Roast). You might be wondering about the name “Thirummi Roast”, which just means rubbed chicken fry. The specialty of this dish is the crushed masala and herbs that exudes a wonderful aroma and lends exotic flavors to the dish. We call it Chicken roast even though it differs from the roast / baked Chicken enjoyed worldwide.

Simple Chicken Roast is a much coveted dish and if you feel too lazy to crush and add the ingredients, you may try the Easy Chicken Roast for easier version. Serves: 5

Ingredients:

Chicken: 1 no. (small, around 1 kg.)
Onion: 2 nos.
Cardamom: 5 nos.
Cloves: 5 nos.
Cinnamon: 1 “ piece (2 nos.)
Garlic: 10 cloves
Ginger: 2” piece
Curry leaves: 5-6 sprigs
Dried Red Chilly: 15 nos.
Pepper Powder: 1 ½ tsp
Turmeric Powder: 1 tsp
Vinegar: 1 ½ tsp
Potato (for fries):  1 or 2 nos.
Coconut Oil: as required

Method:

Clean the Chicken pieces well and drain. Peel the garlic and ginger, crush and keep aside. Crush the whole spices, cardamom, Cloves and Cinnamon. Slice the onions. Break the red chilies into 1 “pieces, discard most of the seeds. Put the chicken pieces in a thick bottomed pan. Add salt and all the crushed ingredients, onions, curry leaves, pepper and turmeric, broken red chilies, vinegar and 1 tbsp Coconut oil. Rub/ mix all ingredients with your hand to combine well.

Keep it covered for some time. Add ¼ cup of water, mix well and then cover and cook it on low fire for some 15 minutes or more, stirring gently in between till it is reasonably cooked. The pieces should not fall apart. Then heat a wide pan (preferably non-stick), add litte oil, and carefully fry the chicken pieces without gravy. When it is slightly brown, drain and keep aside. Add the onions and chilies from the gravy and fry for some time. Finally, add gravy to the pan and saute’ till the gravy thickens and onions, chilies and masala releases pleasing aroma.

Add the fried chicken pieces into the gravy and combine well. Switch off the flame and transfer to a serving plate. Decorate with fried Potato strips/ French fries. Serve hot with Bread, Idiyappam, Appam or rice.

Tips:

  • Red chilies should be broken into small pieces. Discard the seeds.
  • Chicken pieces should be cooked moderately. Pieces should not fall apart.
  • Please adjust the spices as per your taste.
  • Potato should be peeled and cut into long strips for frying. Sprinkling corn flour on them will make it crispier.
  • This is a dry roast recipe, with little or no gravy. If you need more gravy, add little more water to make more gravy.
  • You may try this recipe with Duck or Beef as well.
