Mushroom Pepper Fry (Dry) Mushroom Fry

Mushroom Pepper fry requires simple ingredients only and can be easily prepared. You will enjoy the delightful combination of Mushrooms, crushed Black pepper, garlic and Capsicum/ Bell Pepper. It can be served as an appetizer or as a side dish for Rotis or Fried rice. Button Mushrooms are best for preparing this dish. Pepper coated, tender, juicy mushrooms are stir fried to perfection. The addition of garlic and green peppers take this to another level.

Mushroom Pepper fry takes very less time to prepare.  It is a popular restaurant recipe, but I feel some restaurants mix too much masalas and ingredients and spoil the taste. I like to keep it simple and dry with some green onions or coriander leaves for extra garnishing, and it always turn out perfect. However, care should be taken while cleaning mushrooms as they absorb water. First clean/ wipe all the dirt off the mushrooms with a cloth or tissue paper. Trim the stems and just wash under running water two three times and drain immediately. This way Mushrooms will remain fresh and tender and not soggy.

Ingredients for Mushroom Pepper fry:

Button Mushroom (fresh): 200 gms
Green Chili: 2 nos.
Garlic: 6 – 8 cloves
Onion: 1 big
Pepper crushed: 1 tbsp
Chili Flakes: 1 tsp
Garam Masala: ½ pinch
Capsicum/ Bell Pepper: half
Corn flour/ Rice powder: ½ tsp
Spring Onion: 2 stems

Method:

Clean the dirt off the Mushrooms with a cloth. Trim the stems and quickly wash in water, two times and drain immediately. Cut each Mushroom into 4 parts and keep aside.

Heat 1 tbsp oil in a pan and add chopped garlic and cut green chilies. Chop the onion finely and add to the pan.  Once the onions change color, add crushed pepper, Chili flakes and Garam Masala (small pinch). Now add the diced Bell Peppers/ Capsicum and stir fry for few seconds. Add the mushrooms and combine well and toss on high heat for few seconds.

Cover and cook on medium flame for two minutes. Sprinkle salt and little corn flour or Rice Powder. Toss again on high flame. Top with chopped Spring Onions.

Transfer to a serving Platter and serve hot. You can serve it as appetizer or as a side dish with Fried rice, Noodles, Naan or Roti.

Tips:

  • If you like it less spicy, add only one green chilly, and add less amount of chilli flakes and black pepper.
  • While stir frying Mushrooms no salt should be added to avoid release of water. Add salt only last.
  • The Onions and capsicum should not be overcooked so just stir fry for a minute to make it crispy.
  • You may use Red and Yellow Bell Peppers/ Capsicum for more visual appeal.
  • Pepper should be crushed coarsely. The dish should have peppery bites to get the perfect flavor.
  • You may also add coriander leaves for garnishing.
  • Do not overcook Mushrooms. It should be crispy and tender.
  • Adding Rice flour makes it crispy.
