Potato Stew

Potato stew is a delicious dish and is a great accompaniment for Rotis, Appam or Idiyappam. Frequently made at our home during Noyambu days (Abstinance/ lent days), this is a real delight with mild, delightful flavours. I add some boiled eggs to add to the appeal on regular days and it is savored up within no time. Potatoes are very good source of Vitamin C, Vitamin B6, Potassium, Magnesium etc and contributes to wonderful silky smooth skin apart from other health benefits. Well, I am not cooking up stories here, you can check the health benefits and be sure; It sure does wonders to your skin.

Potato s a main ingredient of all stew, as it is rich in Carbohydrates and balances the rich protein content in Mutton stew, Chicken stew or veal stew. It gives you the energy to kick start your day. The bright white color of the stew gives it an instant appeal especially when you are trying to please your kids. So try this easy recipe to cook a perfect, tasty Potato Stew and enjoy with Appam.

Ingredients

Potato: 2 big
Onion: 1 – 2 nos
Ginger: 1’ piece
Garlic: 6 cloves
Green Chilly: 1 no
Curry Leaves: few
Pepper Powder: ½ tsp
Cardamom: 3 nos
Cloves: 3 nos
Cinnamon stick: 1 no
Coconut milk: 1 cup

Method

Peel the potatoes and cut into thin small strips. Slice onions, slit green chilly, chop ginger and slice garlic and keep masalas ready. Heat oil in pressure cooker and add cardamom, cloves and cinnamon. Add sliced onions, slit green chilly, curry leaves, ginger and garlic and sauté. Add the potatoes and add ½ cup diluted coconut milk (Randaam Paal), adjust the salt and pressure cook till the potatoes are cooked nice and soft. Heat the stew and add ½ tsp Pepper Powder and let it simmer for one full minute. Add the thick coconut milk and turn off heat. Your potato stew is ready to be served. I told you- it is really that simple!

Tips:

  • Adding the pepper powder at the end makes it more appealing as the color remains fresh.
  • You can serve boiled eggs with this stew for added appeal.
  • If you want it spicier, add one more green chilly.
