Beef Fry / Beef Pepper Fry / Nadan Kerala Beef Fry

Beef Fry, especially Kerala Beef Fry with thengakoth (coconut strips) is irresistibly delicious, and this classic dish from God’s own country is extremely popular for this simple reason. Roasted with a complex mix of spices, coconut strips and herbs, it never fails to appeal to your senses with its mouthwatering aroma.

It has been a long break this year, as I was quite preoccupied with exam season, then the vacation (well, initially you feel relieved that you don’t have to be up early for making those lunch boxes ready, but the realization soon dawns, that it is more work – picking up the soiled clothes scattered everywhere, clearing the wet towels, satisfying the summer hunger demands, and the guests. Phew!!). It has been a hectic summer, but thanks to God, the heat is bearable with summer showers peaking now and then and the air conditioners not roaring with full energy. So, here I am, trying to make up for my absence with this special Beef Pepper Fry recipe, which is totally awesome!

Kerala Beef Fry can be prepared in many ways, some like it semi fried and some like it fully roasted. It is known as Beef Fry, Beef Puralan, Beef ularthiyathu in different regions in Kerala. You will love the vibrant taste of succulent beef pieces coated with pepper, flavourful spices, roasted coconut strips and the fried onions. I have already posted the recipe for Beef Ularthiyathu/ Beef roast (semi fry version), Spicy Beef Curry, Beef with Beetroot curryBeef and Kaya Puralan, the special kappa Biriyani etc. This Beef Pepper fry is prepared in a different style and the crushed herbs and spices, fried coconut strips, onions etc., enhance the flavours to make it irresistibly delicious.

It is a good source of minerals, aids in digestion and has anti-inflammatory properties. You might have noticed that I use this ‘super spice’ in most of my recipes. In Kerala, beef fry is best enjoyed with Parotta, Rice and Lime pickle or tapioca. Nadan Beef fry preparation varies from region to region. This recipe is from my original collection- tested and modified, time and again, to give you the perfect Beef Fry recipe. Hope you all will try and let me know how it turned out for you. Ingredients for Kerala Beef Fry:

Beef (Buffalo meat): 1 kg
Small Onion: one handful (10-12 nos)
Garlic: 12 -15 cloves (medium sized)
Ginger: 1” piece
Green chilli: 6 nos.
Turmeric Powder: ½ tsp
Black Pepper (whole): 1 tbsp – 1 ½ tbsp.
Perumjeerah/ Fennel seeds: 2 tsp
Cardamom: 2 nos.
Coriander Powder: 1 ½ tbsp
Kashmiri Chilli Powder: 2 tsp
Garam Masala: 1 ¼ tsp
Curry Leaves: 4- 5 sprigs
Vinegar: 1 tbsp
Salt: as required
Onions (for frying): 2 nos.
Coconut strips: ½ cup
Coconut oil: 3 tbsp + 1 tbsp

Method:

Wash and clean Beef pieces, drain well and keep aside in a pressure cooker. Crush Small Onion, Ginger, garlic and green chili and add to the beef. Add Red Chilli Powder, Coriander powder, Garam Masala, Turmeric Powder and enough salt. Coarsely crush whole Pepper, Perumjeerah(Fennel) and cardamom (reserve two pinches for garnishing) and add to the beef, along with curry leaves and vinegar. Pour 1 tbsp coconut oil and combine everything in the cooker. Cover well and keep aside for 15 minutes. After 15 minutes, pressure cook the beef till well done. Once it cools down, simmer and dry the excess water, stirring in between till the masala coats the beef pieces.

Heat Coconut oil in a pan and fry the Coconut strips till light brown, drain and keep aside. Next, fry thinly sliced onions till golden brown and the curry leaves. Drain and keep aside. Add sliced green chilies (optional), to the oil and mix in the cooked beef. Fry till the beef turns a dark brown color, stirring gently in between. Mix in the Coconut strips and fried onions and sprinkle the crushed pepper spice mix.

Serve hot with rice, Manga curry, thoran and Pavakka fry or with parotta.. It is so delicious, so, let me warn you in advance- this Nadan Beef Fry can be pretty addictive!

Tips:

  • Coconut oil should be used for authentic flavours. Coconut oil gives the traditional taste and is good for health.
  • Adjust the chilies and other spices according to your spice tolerance level.
  • Check the link for Homemade Garam Masala.
  • Do not add water while cooking.
  • Cooking time required could vary according to your pressure cooker. Usually it takes 8 minutes or little more on slow flame after the first whistle. It should not be overcooked.
  • You may mix half of the fried onions and coconut strips and garnish with the other half.
  • For more intense flavours, prepare in advance and Just fry slightly before serving.
  • Enjoy with rice, Pulissery, thoran or with Parotta / Roti.
