Beans Thoran, Kerala Green Beans Thoran
Beans Thoran is a regular Kerala side dish for rice; Green Beans are prepared with Coconut and chilies and served with rice. It is also served during Kerala Sadhya,during festive occasions like Onam and Vishu, along with a train of special vegetable dishes, like Parippu curry, Sambhar, Aviyal, Erissery, Kalan, Koottucurry, Mezhukkupuratti, Pachadi, Olan,Achinga Payar Mezhukkupuratti, Kaduku Manga, Inji curry etc.
For Keralites, Thoran (vegetables prepared with grated Coconut) is a requisite side dish for rice. Thorans are made with almost all vegetables and in different styles according to the region. All greens, leaves, beans and vegetables are deliciously combined with coconut to make mouthwatering dishes.Check my Papaya Thoran, Peechinga Thoran, Vanpayar Thoran,Mushroom thoran etc. Vegetables are also combined together with lentils to make mix thorans like Cheera Parippu thoran, Cabbage Cherupayar thoran, Vazhakoombu cherupayar thoran and mixed veggies thoran like Padavalanga carrot Thoran, Beans Carrot Thoran etc.
In most regions, Green Beans thoran is prepared with green chilies and coconut mix, but in Angamaly region, Beans thoran is prepared with red chili powder and scraped coconut. This recipe was introduced in our family by darling Elsyaunty, and we have enjoyed this different style of delicious Beans Thoran for years. It is quite simple to prepare and tastes wonderful. You may use fresh green Beans or French Beans for this recipe. Try this simple, yet tasty, Beans Thoran that you will definitely enjoy.
|Green Beans||: 250 gms|
|Water||: ¼ cup|
|Red chili||: 1 no.|
|Onion||: 1 no. (medium)|
|Garlic||: 2 – 3 cloves|
|Curry Leaves||: few|
|Red Chili Powder||: 1 tsp|
|Turmeric Powder||: ½ tsp|
|Coconut scraped||: around ½ cup|
Soak, wash, drain and chop the green Beans into small pieces. Cook with little water and salt. Keep aside.
Heat coconut oil in a pan and put mustard. When it pops, add curry leaves and red chili. Add the chopped onion and garlic and sauté till limp. Now, add the turmeric and chili powders. Fry for few seconds and add the scraped coconut. Sprinkle little salt and fry for some time. Then add the cooked beans and combine well.
Cover and cook for another minute. Serve and enjoy with rice.
- You may add crushed red chilies instead of chili powder.
- Coconut oil should be used for great flavors.
- The garlic adds more flavors and reduces bloating.
- Beans contain a lot of fiber and are a good source of vitamins and minerals.
- Always cook beans covered, on medium flame, so as not to lose nutrients.
- Use little water to cook Beans so it dries up when it is cooked.
