Ingredients for Cinnamon Roll Dough:

Plain Flour/ Maida

: 560 – 580 gms (4 ½ cups approx.)

Milk

: 1 Cup

Water (Warm)

: ¼ cup

Yeast (Instant Dry Yeast)

: 2 tsp

Sugar Granulated

: ¼ cup + 1 tsp

Butter

: ¼ cup (60 gms)

Egg

: 1

Vanilla Essence

: ½ tsp

Salt

: 1 tsp

Ingredients for Cinnamon filling:

Cinnamon Powder

: 2 tbsp – 2 ½ tbsp

Brown Sugar (powdered)

: ½ cup

White Sugar (powdered)

: ¼ cup

Butter (soft)

: 6 tbsp

Ingredients for white glaze:

Icing Sugar

: ½ cup

Milk

: 2 tbsp

Vanilla essence (optional)

: few drops

Method:

In a cup add yeast, sugar and lukewarm water and mix well. Keep aside for rising. Heat the milk slightly and melt butter in it. Add Sugar and beat well. Next add egg and Vanilla essence, salt and whisk well. Mix in the yeast mix and whisk again. Divide the flour into 4 parts and add one part at a time to the bowl and mix to incorporate well. Knead for 5 minutes in a standby mixer with a dough hook attached or till the dough starts coming together. Sprinkle more flour if required.Take out the dough and transfer to a floured surface and knead with hands to get a smooth and soft dough.  Rub little butter in your hands and roll the dough into a ball, cover and keep for 1 hour, till the dough is double in size.

Divide the dough into three equal portions (or two if you prefer big Cinnamon rolls). Take one portion and using a rolling pin, roll out into a large rectangle (1/4 inch thick) on a lightly floured surface. Generously spread the softened butter (2 tbsp +) evenly on the top, leaving the edges. Powder both the brown and white sugar and combine with fine Cinnamon Powder (I added 2 tbsp, if you like strong Cinnamon flavours, add ½ tbsp more). Sprinkle this Cinnamon sugar all over the butter thickly and evenly. Now, start rolling the dough from one side tightly, tucking in firmly and rolling to get a tight log.

Pinch the edge to seal and using a twine thread or dental floss cut into 1 inch pieces (or bigger). For cutting, place the twine thread under the roll and cross over and cut the roll into even pieces. Place them in a greased baking dish well apart and keep covered to rise for another hour in a warm place. Roll the other two portions the same way and keep ready.

Preheat oven to 180o C and bake the Cinnamon Rolls for about 30 minutes or till the top is golden brown. Take out and cool it for few minutes and drizzle with Sugar glaze before serving. Enjoy the warm Cinnamon rolls for breakfast or with your cuppa.

For white glaze, mix icing sugar with milk and beat till you get a smooth pouring consistency. You can add cream cheese and few drops of vanilla essence for Cream cheese glaze.

Tips:

  • Always use good yeast. I used Instant dry yeast.
  • Lukewarm water should be used for yeast. If the water is too hot it will kill the yeast.
  • Heat the milk till warm enough to melt the butter. It should not be too hot.
  • Use a whisk to combine the egg and the yeast mix to the milk.
  • Add flour part by part and knead on a standby mixer with a dough hook or knead with your hands on a floured surface till the dough is soft and smooth (About 5 – 8 minutes).
  • The rolls should be placed a little apart, so it just touches each other after rising. If you keep it too close, there won’t be enough space to expand after rising.
  • Cinnamon powder should be very fine. Add 2 tbsp for a pleasing Cinnamon Flavour or add ½ tbsp more if you want stronger Cinnamon flavor.
