Samosas are crispy snacks that are delicious and crunchy, great as starters or evening snacks for kids. These crispy Vegetable Samosas are easy to prepare and perfect to serve with your evening cup of tea. Chai and hot samosas are part of the endearing memories of college canteens, street food chats, and rainy evenings with dear ones.

Although Samosas top the favourite Indian snacks list, it is not on the healthy side. It is deep fried and the delicious masala sabzi filling mostly consist of potatoes. So, if you are calorie conscious, and is trying to lessen the guilt, try the air fried or baked version for a healthier version. However, my take is, if you are eating healthy food with enough fiber and nutrients, it is okay to indulge in what you love and crave for, occasionally.

I have used both homemade samosa sheets and store-bought frozen samosa sheets in this recipe.It is good to have a stock of readymade samosa patties at home, for emergencies. So here is the simple, deliciously crispy vegetable Samosa recipe, with just a handful of ingredients.

Ingredients for Samosa cover:

Plain Flour/ Maida

: 1 ½ cup

Salt

: ½ tsp

Hot oil/ Hot vegetable ghee

: 1 ½ tsp 

Water

:

Ingredients for Samosa filling:

Carrots

: 3 nos

Potatoes

: 3 nos

Onion

: 1 no. 

Green peas

: ½ cup- 1 cup

Ginger Garlic paste

: 1 tsp

Kashmiri chilli powder

: 1 tsp

Turmeric Powder

: ½ tsp

Pepper Powder

: ½ tsp

Garam Masala Powder

: ½ tsp

Cumin/ Jeera Powder

: ½ tsp

Chat Masala

: 1 pinch

Salt

: 1 tsp

oil

: 2 tsp

 

Method for making Samosas:

Chop the carrots, potatoes and onions into small cubes. Keep aside. Boil 2 cups water add ½ tsp salt and add green peas. Cook green peas on medium flame. Drain and keep aside. Heat a pan and add the chopped vegetables, spice powders, ginger garlic paste. Do not add salt. Pour 2 tsp oil and mix well. Add ¼ cup water and cook covered on medium flame. Cook for 4 minutes and stir well. Cover and cook again for 4 minutes and add salt and mix well. Again cover and cook for 3 – 4 minutes. Now, add the cooked green peas. Mix well and adjust salt. Allow to cool.

Let’s Prepare the samosa dough. In a bowl, take 1 ½ cup flour and add ¼ tsp salt. Add 1 ½ tsp hot oil. Mix to make crumbs. Pour water little by little to make a stiff dough. Make a stiff dough. The dough should not be soft. Once the dough is done. Keep aside for 15 -20 mts.Take the dough, dust lightly. Knead again and make small balls. Flatten into thin discs. Heat a Tawa. Cook one side of the flattened Roti. Cook for 30 seconds only. Transfer to a plate. Cook only one side.

Make a paste with 2 tbsp Plain flour/ Maida. Add water to make thick paste. Take one round disc. Cut into halves. Take one half. Fold once to get the mid point. Take the uncooked side. Apply flour paste on the straight edge. Put paste only till the mid part. Now make a cone and join the edges. Seal the edges by pressing together. Fill the cone with prepared filling. Apply paste on the edges. Seal well. If you are using store bought Samosa patties, fold as per intructions.

Fry in oil till golden brown. Serve them hot with Tomato sauce or green chutney.

 

Tips:

  • Adjust the spices according to your taste.
  • You can use store bought Samosa patties or make Samosa dough at home.
  • The dough should be firm, not soft.
  • Use hot oil or melted hot vegetable ghee to prepare dough.
  • Cook only one side of the prepared cover.
  • The roti should not be too thick.
  • Deep frying makes Samosas tastier, crunchier on the outside and softer on the inside.
